What motor can i swap into my GSXR1000? If i wanted to buy another motor with less miles.. what years could i go up to, without any problems?

2003 and 2004 are a direct fit. 2001 and 2002 would be the next easiest to adapt (but would still require a compatible wiring harness and ECU, and frame and fairing modifications), and 2005 and later would be difficult to adapt.
But if I may ask, how many miles are on your stock engine, and what is wrong with it?
