Hydraulic clutches are going to be one of those things that are nice when they work and migraines when they don't. The headache of having to bleed and flush plus the expense of parts when changed just, to me, seems outweigh the advantage of ease/smoothness of clutch play.
A clutch cable costs about $20 and takes about 15 minutes to change. If you wanted a spare could easily be stashed in a tank bag/backpack and could be changed on the side of the road. Buying all the parts for a hydraulic swap would be expensive and a pain. And the idea of changing parts and bleeding it all on the road is almost impossible.
