I have an 05 GSXR-750 and when the bike is cold and I start it I usually have to hold the button for a second to a second and a half until it will start. Now when the bike has been running up to temperature for a while and you go to start it back up it will do it like it should. I just recently bought the bike and it sat for a while before I bought it, does this maybe sound like a spark plug issue or is this just normal because the engine is cold?

I'd say its normal mate. Warmer engines do start easier. Plus your battery may just drop a small amount of charge then gets a boost after a good run.
